Let me congratulate the PDFForge team for their beautiful job. PDFCreator is a very beautiful tool, and each years make it better. Hold on guys!
Now, my request : I've just discover that their is a very nice way to include CC licences in PDF files using meta-data (see this page : http://creativecommons.org/technology/xmp-help), and I think it should be pretty cool to include this in PDFCreator. I did not find a simple way to do this, so some coding may be required.

I did not find where to see such copyright infos in adobe reader... but maybe is this because I do not have PDF files with such copyright currently....
I've just sent a mail to the CC team to get more information about that and to get a mail of some one who may help you. So I hope that you may get more informations this way.
Now MY opinion is:
It seems that the XMP format used to include such metadata in PDF files is also used for various picture formats (you may do it also for them, as PDF creator is able to export to many of them). I think that not all -pdf or picture- reader are able to show such datas. I think this was mainly done to make bots able to discover easily the copyright infos. It is coherent with the fact that the CC team recommends to "include a visible copyright notice as described in how to tag works in addition to embedded metadata".
